The term Zairai (在来) refers to Japan's original, native tea bushes. Unlike modern cultivars which are propagated from cuttings as clones, Zairai plants grow from seed, meaning every single bush is genetically unique. This diversity creates a wonderfully complex and soulful cup with a character that cannot be replicated—a true, untamed taste of the Hiroshima terroir.
