Oolong is a masterclass in tea craftsmanship, representing the vast and beautiful spectrum between green and black tea. What defines oolong is "partial oxidation." After withering, the leaves are skillfully bruised or shaken, a process that begins oxidation. The art lies in how long the tea master allows this process to continue before heating the leaves to stop it. This control can in an incredible diversity of flavours from a single type of leaf.
Oolongs can range from lightly oxidized, which are greenish, floral, and bright like a green tea, to heavily oxidized, which are dark, roasted, and fruity like a black tea.
